Late night craving

I hope I'm not the only one who gets late at night cravings...

Usually it's wanting a huge Sonic drink, sometimes a bowl of salty, crunchy pretzels or chips sounds good, and of course I get normal sweet cravings. I'm doing my nightly routine of blogging and came across this picture (Yum!) and recipe - Which makes any craving worse because then I start thinking of how easy or not it would be to make it, then about if I have the ingredients...etc etc...


I hope to get back into a vibe of making time to bake (and cook real food) more often. This recipe is printed off and added to my homemade cookbook, and in line of what I want to make soon!.

Happy New Year!



I was I would have thought of these amazing NYE cupcakes!

Instead, I didn't make any NYE cupcakes and regret it. So as a result, I've added baking and my blogs to my New Year resolutions! I'm making it a priority to keep both blogs updated. I know, I know...I always say that with practically every other post. But I have had no reason to stay accountable to myself. Now, my reason is because I'm making a goal for myself and I'm posting at least once a week!

I also didn't complete the 12 days of cookies how I said I would. I got a little to busy for having to go to the store every other day and spend hours on end baking. 

I did however, manage to create some ADORABLE baby shower cupcakes for a close friend of mine!



Brynlee will be here in March and she will be arriving in style! Pink and zebra was the theme for her baby shower and it just came together so well! Chelsea (the To-Be aunt and one of my best friends) did a wonderful job decorating and planning for her big sister's arrival. These cupcakes were my personal favorite, Cream Cheese filled Chocolate with regular buttercream frosting - Yum!

Majestic Purple


You can NEVER go wrong with purple - It's just so full and easy on the eye. It's definitely my favorite color. I don't really wear it to often, or even own many purple clothes for that matter. And never have I baked or cooked anything purple...besides berry-something-or-another. 

This icing looks heavenly!!...And I will be trying this soon!

I'm so making these! I've never cared for Pumpkin flavored anything...just Pumpkin seeds. But this year, I'm baking pumpkin everything to find at least one Pumpkin recipe to love.

something in the water?


Just about every other woman I know is expecting a little one very soon! One of my best friends, Amber, has an "almost relative" (a longer story to tell at a later time) who had a baby shower this past weekend. Well the grandma-to-be, Kathy, called and asked if I would make the cupcakes for the shower!

I obviously jumped on the opportunity and had a blast! I don't have pictures from the shower, but I do have a few keepsakes of the little cakes...


There were 30 in total - 10 with yellow icing (paler than the pictures show), 10 with green, and 10 with baby blue. 15 of the cupcakes were straight chocolate, request from the mom-to-be, and the other half were my personal favorite, Chocolate with cream cheese filling ~ Yum!

With a ton of help from my Mom tying on all the decorative ribbons, I made a mess in the kitchen but LOVED baking for someone else's enjoyment!

We had a full house for the Super Bowl! I made red velvet with cream cheese icing for the Colts...




And chocolate with peanut butter buttercream, and chocolate buttercream...my favorite!!

Valentine's Day (and my Mom's and best friend's birthday) is around the corner - and I'm getting exciting for all the red and pink!

Sprinkles in particular will be selling Valentine cupcakes from Feb. 5th - 12th...too bad the Houston location won't be open until March.

I think I've formed a bad habit!

Today after class I treated myself to some more Cake cupcakes....again :o) I feel it's important for me to taste Peace O' Cake's competition, right?!....so I got S'mores and Strawberry. Both were unsurprisingly delicious!

Cake by distinctive details


Peace O' Cake now has legit competition! Cake (by distinctive details) is now opened on the south side of town of Lubbock.


It's in a corner location, but made use of their space by making the counter in the center when you walk in, to the right has their logo merchandise, and to the left is a sprinkles bar to further decorate your little treats. They serve 7 flavors a day, with usually 5 staying the same. Today I couldn't go until 4, but I got their just in time to get 2 of the last ones! They had their signature chocolate, the diner, orange blossom, snickerdoodle, black forest, and velvet elvis left. I got the last snickerdoodle, the last orange blossom, and a signature chocolate. I should have just gotten a fourth one...probably the velvet elvis, but I guess I'll just have to go back another time!

All three were delicious! As I was taking pictures and eating a few bites of each, it was hard to choose my favorite. The signature chocolate is a dark chocolate cake, chocolate chips on the bottom, a small amount of chocolate buttercream, and topped with dark chocolate ganache ~ a chocolate lover's heaven!! The cake was moist and of course all the chocolates were perfect.

The orange blossom was a light, white cake with a hint of orange flavor, filled with raspberry jam like filling. It was topped with buttercream and a smear of the same raspberry on top. Not because it's a cupcake... but this could be a dessert after a heavy meal. It was so light and I felt like I could easily eat the entire thing without feeling gross.

The final lucky cupcake was the snickerdoodle. I love them as cookies, but never get them, I just always think of my mom - When we were little and at the mall with her, me and my younger sister Madison always got the treat of getting an American Cookie Company cookie, and my mom always always always got their snickerdoodle. So I just had to choose that one since I haven't seen her in weeks. It was worth it! It was a moist cinnamon cake topped with cream cheese icing and topped with a layer of cinnamon and sugar. By the time I tried it tonight, the sugar had hardened on top, so their was a great grainy texture when I ate the icing.

End result - After thinking long and hard, I have to say my favorite of these 3 was the orange blossom. Now as much as I love chocolate, the signature was good, but almost just like any other chocolate cake or cupcake you and find. The snickerdoodle was also delicious, and unique to me, but for some reason the orange blossom is what I'm still tasting and thinking about!

Happy Halloween...a little late

A day late I know, but Halloween is always a fun topic...especially Halloween cupcakes! After work Friday morning (Peace O' Cake) I got to bring home a few extra cupcakes - Chocolate chocolate chip!



After eating one of POC's, I was in the mood to make some Spice cupcakes for Halloween...I didn't even have to go to the store to buy anything and this is how they turned out!

The cake is delicious but the cream cheese icing recipe I used will not be used again. It was too runny, and still a day later the texture is strange, it tastes delicious I just don't like how it's too runny. But they still made for good pirate/Halloween pictures!
